Last night, we had fish tacos for dinner.... and they were DELICIOUS! I don't have a lot of experience with fish tacos, because honestly the name fish tacos itself always sounded really gross to me! But, desperate for dinner ideas, I was surfing through foodgawker and came upon a picture of these fish tacos from A Duck's Oven.... They looked so good, I just had to try them. And, they were a total success... we loved them! :) I'm not the best at taking food pictures... mine just don't look as bright and yummy as hers (Maybe I should put them on a white plate...), but they were so good!

The only things I changed: I used tilapia instead of salmon, I only used 1/2 Tbsp. of adobo sauce (I took a tiny taste and it was spicy!) and I bought HEB's refrigerated ready-to-make tortillas. I feel like they are so much yummier when they are freshly made right off the stove top! Yumm... (I also use these for dessert sometimes, when I have a sweet tooth... freshly made tortilla, butter, and a little bit of sugar.. so good! :)
Also, I thought that the chipotle mayo was pretty spicy... So, I only put the coleslaw on my taco, not any of the extra mayo. My husband likes spicy things, so I put the chipotle mayo on his, as well as the chipotle mayo coleslaw like the directions tell you to!
